examples/ip_pipeline: use table library headers
This commit modifies the IP Pipeline application to use the new header
files in librte_table.
As we are now using the new header files, we can remove

files in librte_table.
As we are now using the new header files, we can remove the old ones from
the application directory.

The destination string may not have a null termination if
the source string's length is equal to the sizeof.
Fix by replacing strncpy with strlcpy
