examples/ip_pipeline: replace strncpy with strlcpy
The destination string may not have a null termination if
the source string's length is equal to the sizeof.
Fix by replacing strncpy with strlcpy

Fix by replacing strncpy with strlcpy that guarantees NULL-termination.
